Roast
Roasting is the process that transforms raw green beans into coffee we drink. The roasting process is responsible for the coffee's taste, colour, and aroma. The roasting process is a precise science that requires skill and experience to control the temperature of the flame so that the beans don't get burned and become dark bitter or oily.
During roasting, the beans can lose up 55% of their moisture. They also expand in size. The beans will also begin to release carbon dioxide, which causes them expand and crack. This is referred to as the 1st Crack. The 1st crack marks the moment when sugars begin to caramelize, the bound water begins to escape and the structure of the bean breaks down, allowing oils to flow from their little pockets in the seed. This is an important step when roasting and should you rush the process the coffee will be damaged.
A coffee that is well-roasted will be full and rich of flavor, with smooth, balanced taste. It will have a distinct aftertaste, with minimal sourness but still retains the essence of the bean. This is achieved by roasting beans until they are a medium brown color and have lost the majority of their moisture.
